Ingredients

  • 4 medium zucchini, spiralized or 2 packages pre-spiraled zucchini

  • 1 cup grape tomatoes

  • 2 boneless, skinless chicken breasts, sliced thin

  • 3 tbsp garlic-infused olive oil

  • 1 lemon, juiced and zested

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tsp dried Italian herbs

  • 1/4 cup grated parmesan cheese (optional, for topping)

  • Fresh parsley for garnish, if desired

Instructions

  • Cook the Chicken: Heat 2 tbsp of garlic-infused olive oil in a large skillet over medium heat. Season the chicken with salt, pepper, and Italian herbs. Cook for 6-8 minutes, or until fully cooked and golden brown. Remove the chicken and set it aside.
  • Sauté the Tomatoes: In the same skillet, add the halved tomatoes and cook for 3-4 minutes until they start to soften and release their juices. Remove them from the skillet and set aside with the chicken.
  • Sauté the Zucchini: In the same skillet, add the remaining 1 tbsp of garlic-infused olive oil. Add the spiralized zucchini and sauté for 3-5 minutes, or until just tender. Be careful not to overcook—you want them to maintain some bite.
  • Combine and Flavor: Return the chicken to the skillet with the zucchini. Add lemon juice, lemon zest, and toss everything together. Adjust seasoning if needed.
  • Serve: Plate the zoodles and chicken, and top with grated Parmesan and fresh herbs, if using.

Notes

  • Tips & Variations
Don’t Overcook the Zoodles: Overcooking can make them mushy. A quick sauté is all you need.
Meal Prep Friendly: Spiralize the zucchini ahead of time and store in the fridge for up to 2 days.
Low-FODMAP Tip: Be sure to use garlic-infused oil instead of fresh garlic to keep the dish gut-friendly.
