Why This Recipe Works
This one hits that sweet spot between refreshing and functional.
- Chia seeds bring fiber to support digestion and help keep you full
- Blueberries add antioxidants and natural sweetness without going overboard
- Lemon juice + zest help brighten everything up and can support digestion
- Balanced texture = not too heavy, not too watery.
Basically, it’s the opposite of those breakfasts that leave you feeling bloated or crashing by 10 am.

Recipe Breakdown
This pudding combines almond milk, chia seeds, lemon juice, lemon zest, and blueberries for that warm-weather flavor combo — simple ingredients, no nonsense. Lemon zest is key here; it’s what gives this pudding its tartness.
If you don’t have them already, I highly recommend grabbing some mason jars with lids. This recipe make two servings which fits perfectly into a 16 oz mason jar, but I really like to split this recipe into two 10 oz mason jars with lids, perfect for grabbing on the go. They even come with a spoon!
Tips for Success
Use fresh lemon if you can — it makes a big difference in flavor Adjust thickness by adding more milk (thinner) or chia seeds (thicker) Meal prep it by making 2–3 jars at once Want more protein? Add Greek yogurt or a scoop of protein powder
