Recipe Breakdown
This recipe has everything you want — flavor, fiber, and caffeine.
The chia seeds thicken the almond milk into a pudding-like texture while the espresso powder and cocoa bring that bold mocha flavor. Peppermint extract ties it all together for that festive, refreshing finish.
If you don’t have them already, I highly recommend grabbing some mason jars with lids. This recipe make two servings which fits perfectly into a 16 oz mason jar, but I really like to split this recipe into two 10 oz mason jars with lids, perfect for grabbing on the go. They even come with a spoon!
Why This Recipe Is Gut-Friendly
Chia seeds deliver a gentle fiber boost that supports digestion and helps keep things moving (you know what I mean). The peppermint soothes bloating and cramping, while cacao is packed with antioxidants that support gut lining health.
It’s a treat your digestive system will actually thank you for.

Ingredients
1 cup high protein lactose-free milk or almond milk
3 tbsp chia seeds
1 tbsp unsweetened cocoa or cacao powder
1 tsp espresso powder
1/4 tsp vanilla extract
1-2 drops peppermint extract (be careful here, less is more)
2 tbsp maple syrup (add or remove 1/2 tbsp to your preference)
1 tbsp Greek yogurt (plain)
Pinch of sea salt
Topping Ideas: saved dark chocolate, mini chocolate chips, crushed candy cane, and/or whipped cream
Instructions
- Whisk milk, cocoa, espresso powder, vanilla, peppermint, maple syrup, yogurt, and salt until smooth
- Stir in chia seeds and mix well (or blend for 10-20 seconds for a creamier texture)
- Let sit 10 minutes, stir again, then refrigerate 2+ hours or overnight
- Before servings, stir again, taste, and adjust sweetness, if needed. Add toppings, enjoy!
Notes
- Tips for Success
Use a real whisk for the first mix — chia seeds love to clump.
Taste before chilling and adjust sweetness or mint strength.
For a thicker pudding, use 4 tbsp chia seeds instead of 3.
Serve in mini jars with crushed candy cane for a cute holiday breakfast board. - Storage Tips
Store covered in the fridge for up to 5 days. The flavor deepens as it sits — so yeah, it’s even better the next day.
